Last week, I had a meatball craving. Meatballs isn’t something that I ever really crave but last week it just wouldn’t pass. That meant on our weekly trip to Aldi, I had to pick up all the ingredients.
This is a ridiculously easy recipe to make and if you want an easy week night dinner, I highly recommend this recipe.
Ingredients (Serves 4)
500g Mince Beef
1 Tin Chopped Tomatoes
1.5 Medium Onion
1 Handful Cherry Tomatoes
Seasoning (Salt, Pepper, Chilli Powder, Garlic, Herbs)
To form the meatballs, combine the mince meat with a handful of flour and seasonings. I use my hands, and then roll into balls. You can add very finely chopped onion into the mix, but Jack isn’t the biggest veg fan so I just whacked up the garlic and pepper seasonings. To test flavouring, fry a little bit of the mix. Fry, bake or grill the meatballs and then set aside.
In order to make the sauce, fry onion, chopped cherry tomatoes and garlic. Once softened and starting to turn into a sauce, add the tin of tomatoes. Heat through until warm, and season to taste. I used salt, pepper, mix herbs and chilli powder to season it. If you want to thicken the sauce up, add flour slowly.
Once you’re happy with the flavouring and thickness of the sauce, add the precooked meatballs and stir through.
Serve with pasta (I opted for spaghetti), cheese and lots of garlic bread…or salad if you’re not being a fatty like I was when I ate this.
