I like to think that I’m a reasonable cook (styling my photos not to much, but I can cook) and I’m fairly open to trying new things. When I was sent over a few goodies from Odysea I knew I had to get to searching for the perfect recipes to match them.
Today I’m sharing with you a dip and a drink, perfect for your summer barbecues (which you’ll hopefully still get for a few more weeks!).
By blending the Odysea Chickpeas* (including their oil) with 4 tbsp Lemon Juice, 1.5 tsp Cumin, 6 tbsp Tahini, 4 tbsp water, 1 tbsp Iliada Olive Oil* and 1 tsp of paprika in either a blender or a food processor, you can make the easiest hummus ever.
Not that hummus is difficult, but this tasted fab. You can add more tahini to make it creamier and more water to loosen it up a little, however you want it. I personally didn’t add garlic but that’s definitely an option, and I added salt and pepper to taste.
This makes so much hummus so it’s definitely perfect for a big family do! We were eating this for a week between four of us so it definitely goes a long way.
Gin & Pomegranate Fizz
When I opened the package from Odysea I had no idea what to do with the pomegranate molasses, but after a bit of google searching I managed to alter a cocktail recipe that I spotted online to make it the perfect summer tipple.
Blend 60ml Gin, 2 tsp Sugar, 1 tbsp Lemon Juice, 2 tbsp Pomegranate Molesses* and 1 Cup M&S Mexican Lime And Lemongrass Sparkling Presse (or any sparkling citrus drink of your choice, I just thought this would be super refreshing for a summer’s evening) and pour into a small tumbler.
Unfortunately I was out of ice but you can definitely add ice to make this even more refreshing. I garnished with fresh mint from the garden and a few raspberries (which tasted incredible once they’d soaked in the cocktail for a while).
I love being experimental with food and drink and I can’t wait to try out a few more recipes with these ingredients!
