A Homey Day Lunch

I hate packed lunch. I hate the process of making it, I hate that it’s cold, and I hate that it’s been sitting in my bag for hours. This means that when I’m home at lunch time I make myself something warming that will keep me full all day.


My favourite lunch to make at the minute is roast vegetables, grains and salad greens. Although there is lots of prep involved, it’s actually really easy to make. You can literally throw in anything that you want to; I use whatever I have in my fridge so it turns out slightly differently every time.


My main ingredients are lots of veggies, some sort of protein and grains. This particular salad bowl included:
Bulgur and Quinoa Mix
Mini Gem Lettuce
1/2 Avocado
5 Baby Plum Tomatoes
1/4 Red Pepper
1/2 Courgette
1/3 Red Onion
3 Closed Cap Mushrooms
4 Brussel Sprouts
2 Cloves of Garlic
1/3 Tin of Chickpeas
2 Rashers of Bacon
8 Cubes of Feta


I roasted the tomatoes, pepper, courgette, mushrooms, onion and garlic in the oven at 220 degrees for around half an hour in coconut oil. Whilst the vegetables were roasting I cooked my quinoa mix as this takes a little less time than the roast vegetables (even less time if red quinoa isn’t involved). I then chop up the rest of my veggies that don’t require cooking and move them to a separate container before chopping up bacon. I cut all the fat of the bacon then dry fry it until cooked. I’m quite slow at chopping things and get easily distracted so it all finishes around the same time I just put the salad bowl together. Easy peasy!


I obviously could’ve made this way healthier but where’s the fun in that? This is honestly my go to lunch and it does taste pretty good cold too!
